Katsu Curry / katsu karē カツカレー Recipe - Explosive Fitness
Scott demonstrates how to make the famous Authentic Japanese Katsu Curry. Curry: 2 Carrots 2 potatoes 2 onions 1 clove of garlic 1.5 litre water 1 box of Japanese Curry Roux (Can be found at any asian/chinese supermarket) ルー3 Tbsp Sake (酒) 4 Tbsp Mirin (味醂/みりん) 2 Tbsp Soy sauce (醤油) Salt & Pepper as required Freshly cooked Japanese short grain or Thai Jasmine rice Tonkatsu (Breaded pork cutlet) 2 Pork lion or Pork chops (Flattened out with a rolling pin, heavy pan or malet) 2 handfulls of plain flour, highly seasoned with salt and pepper 2 eggs lightly beaten Panko Breadcrumbs Put your rice on to cook using a rice cooker, or if using a pan add 3 cups of rice and wash throughly until water runs clear then add 3 and 1/2 cups of water. Bring to a boil and then cover and lower the heat to its lowest setting. Leave for 12-15 minutes until cooked. Once cooked allow to cool for 10 minutes with the lid on before fluffing up and serving. Prepare the Tonkatsu/Pork Cutlets by first trimming of all fat and then placing between to sheets of cling film. Pound the meat out even and until nice and thin. Then first coat in the seasoned flour, dusting off all excess, then coat in the beaten egg followed by the Panko breadcrumbs. Then place into the refrigerator until needed. For the Curry sauce, add 3-4 tbsp of olive oil to a large pan heated to medium heat followed by the prepared onions, carrots and garlic.
